Carrot Apple Ginger Soup

Carrots are the darlings of January! Holding over through the winter, these delicious roots never lose their sweetness which makes them the perfect bedfellows for late season apples that are losing their crunch but concentrating their sugars. This soup has always been one of my favourites – inspired by my dear friend Wendy who swore that ginger in anything kept the winter cold away and used to make me carrot ginger soup on a weekly basis. I’ve added the apples and my favourite herb for a bit of freshness, but if you like your food with a bit of a kick, this stands up to chiles really well. Try a couple drops of the amazing Bone Suckin’ Sauce or a sriracha créme and you’ll be warmed up in no time.

NOTE: as with ALL soups, please cool COMPLETELY before blending unless you have an immersion blender! Serious burns will happen if you try and blend any liquid in a stand blender while hot.

Carrot Apple Ginger Soup with Cilantro Créme

Ingredients
Soup
  • 1lb organic carrots, chopped to 1" pieces
  • 2large sweet apples (Fuji, Pink lady), peeled and roughly chopped
  • 2 Tbsp. EVOO
  • 1 small onion, diced
  • 1Tbsp. fresh ginger, grated
  • 1L. chicken stock
  • sea salt and white pepper to taste
Cilantro Creme
  • 1/4cup sour cream
  • 1Tbsp. Greek yoghurt
  • 2Tbsp. fresh cilantro, chopped
Instructions
Soup
  1. Once fully cooled to room temperature, transfer soup in 3 portions to a sting blender and blend until silky smooth. Reheat on the stove top and serve topped with cilantro créme.
  2. Add the stock and the rest of the soup ingredients into the pot and boil on medium heat until the carrots are fully softened. Set aside to COOL COMPLETELY!
Créme
  1. Mix creme ingredients together and store in refrigerator until ready to use.
